Avocado And Lime Salad

Diced cucumber, diced bell pepper, sliced green onion, diced avocado and pineapple chunks are tossed with a dressing made from fresh lime juice, crushed garlic, extra virgin olive oil, salt and pepper. Salad is served on fresh lettuce and watercress that has been combined and arranged on a serving platter. Garnished with chopped fresh coriander.

Ingredients -

1 Crisp Head of Lettuce, finely shredded
2 ounces Watercress, washed and roughly chopped
1/2 Cucumber, diced
1 Red Bell Pepper, diced
1 bunch Green Onions, trimmed and sliced diagonally
2 Hass Avocados, peeled, pitted and diced
2 rings of Pineapple (canned), cut into chunks
3 Fresh Limes, juiced
1 Garlic Clove, crushed
3 tablespoons Extra Virgin Olive Oil
Salt and Freshly Ground Black Pepper, to taste
a handful Fresh Coriander, roughly chopped

 
Preparation:

1. Mix the shredded lettuce and watercress together and scatter over a serving platter.

2. In a bowl, mix the cucumber, pepper, spring onions, avocados and pineapple together and reserve.

3. Whisk the lime juice, garlic, olive oil, salt and pepper together to make a dressing.

4. Add to the chopped vegetable mixture and mix well.

5. Spoon over the lettuce and watercress and scatter the coriander over the top.

6. Chill the salad for about 30 minutes before serving.

The only way to really judge if an avocado is ripe or not is to gently squeeze the fruit. It should give slightly.

Coriander

Coriander is another name for cilantro. A good substitute for the coriander would be parsley. It has a fresh, less bold taste than the coriander.
