Avocado and Cherry Tomato Salad

Halved cherry tomatoes, chopped green onion, chopped avocado, chopped parsley and chopped dill are gently mixed and topped with vinaigrette prepared from balsamic vinegar, garlic, prepared mustard, coarse salt, fresh ground black pepper and olive oil.

Ingredients -
Salad:
1 basket Cherry Tomatoes, halved
2 tablespoons chopped Green Onion
1 peeled, seeded and chopped Hass Avocado
1 tablespoon chopped Parsley
1 tablespoon chopped Dill

Dressing:
2 tablespoons Balsamic Vinegar
1 small Garlic Clove
1 teaspoon Prepared Mustard
pinch Salt and Fresh Ground Black Pepper
1/2 cup Olive Oil
 
Preparation:
Salad:

Gently mix all ingredients. Serve with dressing.

Dressing:

Whirl vinegar, garlic, mustard, salt and pepper, cup olive oil in blender.

Once an avocado has been cut open the flesh will begin to turn brown from exposure to air. Sprinkle freshly cut avocado with lime or lemon juice to slow or stop this browning.
