Avocado and Onion Salad

Chopped avocado, chopped sweet onion, chopped green bell pepper, chopped vine-ripened tomato, chopped fresh cilantro and fresh lime juice tossed together gently. Salad is seasoned with coarse salt and fresh ground black pepper.

Ingredients -
2 Avocados - peeled, pitted and diced
1 Sweet Onion, chopped
1 Green Bell Pepper, chopped
1 large Ripe Tomato, chopped
1/4 cup Fresh Cilantro, chopped
1/2 Lime, juiced
Salt and Fresh Ground Pepper to taste
 
Preparation:

1. In a medium bowl, combine avocados, onion, bell pepper, tomato, cilantro and lime juice.

2. Gently toss until evenly coated.

3. Season with salt and pepper.

Storing Avocados

Store uncut avocados at room temperature in a cool location and never store in the refrigerator.  A rock hard avocado may take up to a week to ripen.

Sweet Onions

Sweet onions have a higher sugar content than regular onions such as the white or yellow onion. But they are much lower in sulfur and are much less pungent. Examples of sweet onion varieties include Vidalia and Maui.
