Avocado Salad with Bacon and Sour Cream

Crisp bacon pieces gently tossed with cubed avocado, chopped green onion, sour cream, fresh lemon juice and coarse salt. Salad is served on individual plates over arranged red leaf lettuce.

Ingredients -
4 Bacon Slices, chopped
2 Avocados, peeled, pitted, and cubed
3 Green Onions, finely chopped
1/2 cup Sour Cream
1 tablespoon Fresh Lemon Juice
Coarse Salt, to taste
Red Leaf Lettuce
 
Preparation:

1. Cook the chopped bacon in a skillet over medium heat until crisp.

2. With a slotted spoon, remove bacon to a paper towel. Drain fat.

3. In a large bowl, gently combine avocados, bacon, green onions, sour cream, lemon juice, and salt.

4. Arrange salad leaves on plates, and spoon avocado salad on top.

Avocado flesh will begin to turn from green to brown as soon as it has been cut open, much like that of an apple. Sprinkling citrus juice over the freshly cut avocado can slow or stop the browning.

A great choice would be thick cut bacon. You could substitute pancetta, prosciutto, or even Canadian bacon in this recipe and the salad would be delicious.
