Chopped cucumber, chopped avocado, and chopped fresh cilantro combined with minced garlic, minced green onion, coarse salt, and fresh ground black pepper. Salad is dressed with fresh squeezed lemon and lime
juices. Chilled and served cold.
Ingredients -
2 medium Cucumbers, cubed
2 Avocados, cubed
4 tablespoons Fresh Cilantro, chopped
1 clove Garlic, minced
2 tablespoons minced Green Onions
1/4 teaspoon Salt
Fresh Ground Pepper to taste
1/4 large Lemon
1 Lime
Preparation:
1. In a large bowl, combine cucumbers, avocados, and cilantro.
2. Stir in garlic, onions, salt, and pepper.
3. Squeeze lemon and lime over the top, and toss.
4. Cover, and refrigerate at least 30 minutes.
