Tuna and Avocado Salad

Mashed hard cooked egg and avocado combined with albacore tuna, mayonnaise, dill relish, fresh lemon juice, hot sauce and salt.

Ingredients -
2 Large Hard-Boiled Eggs
2 teaspoon Hot Sauce
1 cup Avocado, mashed
1/2 cup chopped White or Yellow Onion
1 (6-1/2 ounces) can Solid White Albacore Tuna (in water)
2 tablespoons Mayonnaise
2 tablespoons Dill Relish
1 Fresh Lemon Juice
Salt, to taste
 
Preparation:

1. Peel eggs and mash real well with a regular dinner fork (more or less mince them).

2. Peel avocado and squeeze 1/2 lemon on it to keep from discoloring.

3. Then mash real well with fork.

4. Mix these two ingredients real well.

5. Drain water from tuna and mix with onions, eggs, avocado, dill pickles or relish, salt, hot sauce, and mayonnaise.

6. Serve over lettuce.

Solid White Albacore Tuna

Most of the major brands of tuna offer a solid white albacore variety. The tuna is especially nice for salads. Buy the tuna packed in water, squeeze out the water and flake off big chunks.

Hard Boiled Eggs

Hard boiled eggs require a good half hour or more to be cooked and cooled properly. Making them well in advance is preferred. Leave them in the shell and peel when ready to use.
